Clean Chicken Noodle Soup

People are always asking for healthy recipes that kids love. I know my girls LOVE chicken noodle soup! This recipe is so easy and the whole family loves it. Plus its packed full of nutrients.

Ingredients


  • 1 large onion, diced
  • 4 large carrots, sliced
  • 4 stalks celery, sliced
  • 1 Tbsp olive oil
  • 8 cups low-sodium chicken broth
  • 4 boneless, skinless chicken breasts
  • 1/2 tsp whole black peppercorns
  • 1 bay leaf
  • freshly ground pepper
  • 1/4 cup parlsey, chopped
  • 8 oz. whole wheat  noodles

Instructions

Place all ingredients except noodles in the slow cooker. Cook 6 hours on low of 3 hours on high. Skim any fat from the soup. Discard day leaf. Shred chicken. Cook noodles as directed and add to soup.

TurboFire Chili

It's a football season Sunday so in our house that means chili! Its also the playoffs and even though we are in NJ, our team is the Colt's and they are playing today, so we're pretty excited. This recipe is a favorite in our house and the Beachbody community. Its hearty and healthy and even the kids love it. I usually double up so that I have it for leftovers during the week. I'll also add green peppers and any other veggies I happen to have.

Turbo Fire Chili Recipe
1 lb lean ground turkey
1/2 cup diced tomatoes
8oz whole kernel corn, canned
1/2 onion, diced
2 garlic cloves
8oz black beans, canned
8oz pinto, chili, or kidney beans, canned
1tbsp tomato paste
1 pkg Lawrey's Chili seasoning
4 oz low-fat shredded cheddar cheese (optional)


Brown turkey. Drain and discard any fat. Place all ingredients except cheese into a slow cooker. Cook for 4 hours on low, or 2 hours on high. Top with 1 oz. cheese, if desired
